Baked Oatmeal with Pumpkin and Bananas             Makes 12 servings

4 very ripe bananas

2 tablespoons honey

2 cups oatmeal

1/2 cup chopped pecans

1 1/2 teaspoon cinnamon

1 tablespoon pumpkin pie spice

1/2 teaspoon nutmeg

pinch salt

2 cups canned pumpkin

2 eggs

2 teaspoons vanilla

2 cups milk (any kind you like)

1/2 cup brown sugar

Slice the bananas and place on a buttered 9 x 13 inch baking dish.  Drizzle with honey and sprinkle with a bit of cinnamon.  Bake 15 minutes (or until soft) at 375 degrees.

Mix oatmeal, pecans, cinnamon, pumpkin pie spice, nutmeg and salt in a large bowl.  After the bananas are baked, sprinkle dry mixture over bananas.

Mix canned pumpkin, eggs, vanilla, milk and brown sugar in another bowl.  Spread evenly over the oatmeal mixture.

Bake all for 45 minutes until the top is brown and the mixture is set.  Serve warm with milk.
